Mixing spiral	3 minutes 1st speed, 6 minutes 2nd speed
Dough temperature	27º C
Bulk fermentation	10 minutes
Scale	120g for a small toast mould
Intermediate proof	10 minutes

Make up

Shaping	Put dough in a square mould with top. Put a small bowl (bottom down) in the centre before closing the top of the mould.
Final fermentation	± 60 minutes at 29° C, 85% RH.
Intermediate proof	10 minutes

Baking

Oven temperature	230° C
Baking time	± 17 minutes
