Working Method

Part 1
  1. Place all ingredients into mixing bowl.
  2. Mixing Spiral: yes.
  3. Dough temperature: 28° C.
  4. Bulk fermentation: 20 minutes.
  5. Scale: 2 kg head of dough.
  6. Intermediate proof: 15 minutes.
  7. Mould into round balls. Press down into foil trays.
  8. Final fermentation: 40 - 45 minutes
  9. Spray on Sunset Glaze and sprinkle with sesame or poppy seeds.
  10. Bake at 200° C for 15 minutes.
  11. Deck oven Top temperature 220° C. Bottom temperature 180° C.
  12. Baking time 20 - 25 minutes.
