Working Method

Method
  1. Place all ingredients into mixing bowl.
  2. Mix for 6 minutes on slow speed and 4 minutes on fast speed. Dough temperature ± 24° C.
  3. Scale 1,500 kg dough heads, divide into 30 pieces with bun devider then place 10 pieces into each pan.
  4. Prove for ± 50 minutes.
  5. Spray with Sunset Glaze before baking.
  6. Bake at 220° C for ± 25 minutes.
