Working Method

Method
  1. Place all ingredients into mixing bowl.
  2. Mix for 2 minutes on slow speed and 7 minutes on fast speed. Dough temperature ± 24° C.
  3. Scale off, 4 pieces of dough at 150g each mould round and rest for ± 5 minutes.
  4. Roll each peace 30 cm long, tapered towards the end.
  5. Line the 4 pieces of dough up and fasten at one end.
  6. Proceed as follows : 2 over 3; 4 over 2; 1 over 3; Repeat 3 times and fasten other end.
  7. Prove for ± 50 minutes.
  8. Spray with Sunset Glaze before baking.
  9. Bake at 220° C for ± 25 minutes.
