Method

Place Group 1 into the mixing bowl.
Mix for 2 minutes on slow speed and 7 minutes on fast speed. Dough temperature ± 24° C.
Add Choc Chips and Caramel Chips on the last 2 minutes of mixing time. Do not overmix.
Scale heads of dough at 1800kg, mould round and place 6 into 4051p foils.
Mix cross mix, water and oil in a bowl fitted with a whisk on high speed for 5 minutes.
Prove for ± 50 minutes.
Pipe crosses on buns with small plain tube.
Spray with Sunset Glaze. Sunset Glaze can also be diluted with up to 30% water.
Bake at 220° C for ± 12 minutes.
