Kiddies Chocolate Chip Hot Cross Buns Premix


Working Method

  1. Place Group 1 into the mixing bowl.
  2. Mix for 2 minutes on slow speed and 7 minutes on fast speed. Dough temperature ± 24° C.
  3. Add Choc Chips and Caramel Chips on the last 2 minutes of mixing time. Do not overmix.
  4. Scale heads of dough at 1800kg, mould round and place 6 into 4051p foils.
  5. Mix cross mix, water and oil in a bowl fitted with a whisk on high speed for 5 minutes.
  6. Prove for ± 50 minutes.
  7. Pipe crosses on buns with small plain tube.
  8. Spray with Sunset Glaze. Sunset Glaze can also be diluted with up to 30% water.
  9. Bake at 220° C for ± 12 minutes.
