Working Method

  1. Place all ingredients into mixing bowl.
  2. Mix for 6 minutes on slow speed and 4 minutes on fast speed. Dough temperature ± 24° C.
  3. Scale heads of dough at 2 kg, mould round and rest.
  4. Roll dough into a rectangular shape 1 - 2 cm thick.
  5. Spread surface thinly with sunflower oil and give a fine dusting with cinnamon and sugar.
  6. Roll up as for Chelsea, cut and place in large muffin tins.
  7. Prove for ± 50 minutes.
  8. Spray with Sunset Glaze. Sunset Glaze can also be diluted with up to 30% water.
  9. Bake at 220° C for ± 12 minutes.
  10. Spread with cream cheese icing and sprinkle with nuts.
