Working Method

  1. Place spicy bun premix, yeast and water in mixing bowl.
  2. Mix for 2 minutes on slow speed and 7 minutes on fast speed. Dough temperature ± 24° C.
  3. Scale heads of dough at 2kg, mould round and rest.
  4. Roll dough into a rectangular shape 1-2cm thick.
  5. Sprinkle with cinnamon sugar.
  6. Roll up as for Chelsea and place 3 in a madeira foil.
  7. Prove for ± 50 minutes.
  8. Spray with Sunset Glaze. Sunset Glaze can also be diluted with up to 30% water.
  9. Bake at 220° C for ± 15 minutes.
  10. Spread with cream cheese icing and drizzle Caramel spread, then decorate with a cherry.
