Working Method

Part 1
  1. Place measured warm water into a mixing bowl that has been fitted with a whisk.
  2. Add Meringue Powder and mix on medium speed for 2 minutes or until powder has dissolved nicely.
  3. Switch machine onto fast speed and add castor sugar gradually in ± 3 equal portions.
  4. Once mixture has peaked nicely add flavouring and pipe onto a silicone lined trays.
  5. Bake for 1 hour at 100° C then switch off oven with damper open overnight.
