Chocolate Lamingtons


Working Method

  1. Place measured water, egg and sponge mix into mixing bowl first.
  2. Mix for ± 1 minute on slow speed and 8 minutes on fast speed. Make sure whisk has full compliment of wires.
  3. Scale off batter into a grease proof lined pan.
  4. Bake at 180° C for ± 20 minutes.
  5. Remove from oven and leave to cool.
  6. Mix Lamington dip and the water(must be boiled) together until all powder is dissolved.
  7. Using a divider cutter cut pan of sponge into 6 x 6 = 36 pieces. Each piece of sponge should measure 9 x 4,5 cm.
  8. Dip each piece of sponge into the prepared lamington dip and place on a drip tray for 5 minutes.
  9. Then gently roll each piece of dipped sponge into the desiccated coconut.
  10. Cut each lamington down the middle and pipe ± 10g of filling.
