Working Method

Part 1
  1. Accurately scale of ingredients in accordance with the recipe.
  2. Dissolve Bicarb and salt in water and add.
  3. Mix for 3 minutes on slow speed and scrape down, mix for a further 3 minutes on fast speed.
  4. Remove dough from mixer and refrigerate for 6 hours before use.
  5. Cover dough with plastic so that it does not form a skin.
  6. Make enough for 6 days only.
